Slow Cooker Shredded Beef Enchiladas Recipe

Ingredients
1 2 lb chuck roast
salt and pepper
2 cups low-sodium beef broth
2 tablespoons apple cider vinegar
1 cup of your favorite salsa
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
2 tablespoons cornstarch mixed with 2 tablespoons water to make a “slurry”
10- 12 large flour tortillas
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
